Pincuisine...Cheeseburger Soup

One of my goals is to make a different soup every week.  So when I saw this recipe I pinned it on my soups and stews board.
The recipe I based mine off of (and home of the original image) is Cheeseburger Soup I from Allrecipes.
Cheeseburger Soup
  • One pound of ground beef
  • 3/4 cup chopped onion
  • 3/4 cup chopped celery
  • 3/4 cup grated carrot
  • one red pepper, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • freshly ground pepper, to taste
  • 4 tbsp butter
  • 4 cups chicken broth 
  • 1/4 cup flour
  • 2 cups grated cheese, I used smoked swiss and cheddar
  • 1 1/2 cup milk, I used 2%
  • 1/4 cup sour cream, I used light

Start by browning the beef with one tablespoon of butter over medium heat, add the cumin, chili powder and pepper.
Next add the veggies
Add the broth and diced potatoes
 In a sauce pan melt the remaining butter and add the flour, then add the milk gradually.  Keep stirring while you do this, keep stirring until smooth.
 

Add this slowly to the soup, stirring while you do it.
Once incorporated into soup, add the grated cheese.  Bring back to a boil, lower heat to a simmer.  Add the cheese, stirring to melt and incorporate into soup, then add the sour cream.  Do not boil the soup at this point.
